Chefs Trading's Market Report for November, 2019. Read on for information on what is expected in Costa Rica/Panama, Mexico, our FIPs and Social Responsibility efforts as well as new offerings from Spain.


Costa Rica/Panama

Fishing is great in Costa Rica and Panama!

We have been seeing smaller Mahi-Mahi and are still waiting for the bigger sizes to come in with increased production, should be soon this month. 

Yellowfin Tuna pricing has been low low and we look to see production continue however we do expect to see slightly lower production of Yellowfin Tuna this month especially when Mahi landings start to be stronger, as always with great off the boat quality, direct shipping from the docks to you, and with our CT Tags all products are Traceable to the boat and supporting the Fishery Improvement Project.  

Swordfish landing are expected to be strong with the full moon cycle as usual.

Maricultured Spotted Rose Snappers are still continuing to grow in popularity. Whole, Fillet and Butterfiled Fillets are available with a very long shelf life and perfect texture and flavor. Traceable with our CT Tag and Sustainable!

 

Mexico

We are proud to be a partner with CeDePesca and many other stakeholders and participants in the Mexican Grouper/Snapper Fishery Improvement Project(FIP). A portion of our sales from this fishery will go back to the fishery via the FIP to help support sustainability. Black and Red Grouper productiuon is expected to be steady. 

Red Snapper volumnes should dramatically increase by end of the month.

 

Spain

We are starting to bring in Bronzino direct from Spain to You. 800-1000 gram(1-2 pound) sizes all the way up to the larger sizes 2000-2500 grams(4-5 1/2 pound).
